A little while ago I made pesto to use on pasta for dinner. I over compensated when making it and made way too much so since then I have been trying to think of ways to use up the extra
So the other night i decided i was somehow going to use the pesto with chicken but did not know what i was going to do. When i was getting the chicken at the store i decided breading it would be a good idea and thought panko flakes would add a nice texture. So I went to find them and the panko was quite expensive so I decided just to use breadcrumbs which I have at home. When going through my cabinet I happened upon instant mashed potato flakes my room mate bought. I decided to use these and the breadcrumbs so that the breading would be more flaky than just the bread crumbs.
Easy Pesto Chicken (a sort of recipe)
{don’t mind the old pan in the picture it has been through a lot}

Instant Mashed Potato Fakes
Olive Oil
Parmesan Cheese
To make this I took a small bowl and added in some pesto and olive oil to make it a little thinner. I put the chicken in here and covered it with the pesto and left it while I got together the breading.
For the breading I mixed a pretty equal amount of bread crumbs and Potato flakes and added some spices to it.
I then took the chicken from the pesto and breaded it in the breading mix
After I completed this i put them on a pan and cooked untill almost done then added the cheese for the remaining cooking time.
and that is all to it! super easy and quick!

These are some things I have found over the past few months while thrifting.
The Tea pot and coasters were found at Village Merchants in Portland Oregon
and the tea cups were found at a antique store in Aurora Oregon. I plan on
having a whole set of yellow plates and cups that don’t match per say but go
together.
